Miso Veggie Dumpling Soup

Ingredients:
2 tablespoons olive oil
4 garlic cloves, chopped
4 scallions, sliced
2 tablespoons fresh ginger, chopped
1 cup carrots, shredded or sliced
1/2 cup shiitake mushrooms, sliced (optional)
1 jalapeño, sliced (optional)
4 cups miso broth (or veggie broth or water mixed with 4 tablespoons miso paste)
1-2 tablespoons sambal oelek, sriracha, or a generous pinch of chili flakes
6-8 frozen dumplings of your choice
1 bunch kale, swiss chard, collard greens, mustard greens, or bok choy, roughly chopped
1 bunch cilantro, roughly chopped (keep the stems!)
soy sauce to taste
1 lime (optional)
Preparation:
1. Prep your veg! Chop your ginger and garlic, slice your scallions (on the bias baby!) and set aside the dark green slices for topping, shred or slice your carrots, chop your greens and cilantro, and slice your mushrooms.
2. Heat your olive oil in a large pot or dutch oven over medium heat, then add your ginger, garlic, and white and light green scallion slices. Sauté until your aromatics are fragrant and starting to get golden.
3. Add your sturdy veggies, like carrots, jalapeños, bok choy, and anything else you want to throw in. Season with salt and pepper and sauté for about 5 minutes.
4. Add your broth and sambal oelek, sriracha, or chili flakes, mushrooms, and cilantro stems. Bring to a boil, then reduce to a gentle simmer and cook until the carrots are almost tender.
5. Add your greens and dumplings! Note: I like giving my dumplings a quick sauté in a separate pan in a little bit of oil before adding to the soup while everything else is going. I find that it helps them stay together more so they don't fall apart in the soup, but it's also totally fine to just add them straight from the box. If you're making this soup ahead of time, I recommend keeping the dumplings separate and adding as needed!
6. When your dumplings are warmed through and your greens are tender, taste and adjust seasoning, adding soy sauce and more spice if needed/desired.
7. Serve with lime, the rest of your cilantro, extra chili paste or flakes, and anything else you'd like!
