White Bean Dip with Harissa and Lemon

This dip is my ideal hummus alternative. Spicy, punchy, creamy, perfect, and comes together in just a few minutes. I ate it with potato chips, then again later smeared onto fried sourdough toast and topped with jammy cherry tomatoes and garlic. I love her!

Ingredients:
1 can white beans, drained and rinsed
1 lemon, juiced and zested
3 garlic cloves, peeled
1-2 tablespoons harissa, depending on spice level, plus more for finishing
3 tablespoons olive oil, plus more as needed

Preparation: 
1. Combine white beans, lemon juice and zest, garlic cloves, harissa, and olive oil in a food processor or blender. Season with salt and pepper, and blend or pulse until creamy. Taste and adjust seasonings.
2. Transfer to a bowl and swirl in a little more harissa and olive oil. Top with flaky salt, pepper, and parsley if desired. Smear it on a sandwich, dip roast chicken in it, eat it with chips, do whatever your heart desires with it.
